The fan oven rule of thumb
Fan (convection) ovens circulate hot air, so they cook faster at a lower temperature. The standard adjustment is to subtract 20°C (or about 20°F) from the conventional electric temperature. It is not exact for every model, but it is close enough for most home ovens, and it is exactly how the table above is built.
Gas mark is a UK-specific scale that does not correspond to a fixed temperature the way Celsius does — it is a step scale defined by oven manufacturers, so the table above reflects the widely-used standard mapping rather than a physical formula. Older or non-UK gas ovens can be calibrated slightly differently; if a dish consistently over- or under-cooks at the "correct" setting, trust your oven's own behaviour over the chart.
